Zucchini & Chicken

1 cut up whole chicken or chicken breasts/thighs/legs as your choice to feed your family.
3 large zucchinis washed and diced.Do not peel of green skin.
2 whole tomatoes washed and diced.
1 medium onion in slices.
2 medium cans whole corn kernels drained
2-3 crushed garlic cloves.

Cook chicken (without skin)in small amount of oil till all pink is gone and juices run clear(do not brown chicken). Cook in a dutch oven. Drain all grease/juices, etc. add all diced vegetables and mix with chicken. Add 3/4 cup of water. Add salt/pepper to your taste. Cover with lid and simmer for about 1 hour or more. Check that vegetables have become soft and lots of juices have surfaced. Smells heavenly throughout the house. Check if enough salt has been added per your taste.
