1 pkg. angel food cake mix
1 20 oz. can crushed pineapple, in its own juice
Mix together the two ingredients together for 1 minute with a mixer. Bake according to box directions for either a cake or cupcakes. Serve each with 2 tbsp. of Cool Whip Free and it's only 1 point per cupcake!
Variations: You can use maraschino cherries cut up and about 2 tablespoons of cherry liquid mixed with enough water to make 1 cup of liquid. Try using canned Mandarin oranges and adding a little water if needed to make the 1 cup of liquid and bake according to box directions for either a cake or cupcakes. Try it with canned peaches, pears, other fruits. Just important if you're watching your weight, to use fruits packed in their own juice or water. Cupcakes can be frozen.
