Southwestern Corn Soup

This soup can be as simple or complex as desired. The meat is optional, but it adds some protein. Tofu could be substituted in place of meat.

1 package of Southwestern Corn Soup (Campbell’s Gold Box)
1 can of corn (if desired)
1 pound of ground beef, turkey or chicken (I’ve even made it with hot dogs)
1˛2 cup elbow macaroni or rice (if desired)

Brown the ground meat in a non-stick pan. Drain. If using tofu, prepare as you would normally. Cook the macaroni or rice until done. Combine the Southwestern Corn Soup, cooked meat or tofu, elbow macaroni or rice, and corn. Heat until hot. I suggest heating slowly since it will be very thick and can plop all over the stove. Spoon into bowls and serve with a salad of greens or a sandwich. Enjoy.
