Sesame Chicken with Stir-fried Vegetables

4 chicken breast halves, skinned and boned
Sesame oil (to brush chicken with)
Pam Cooking Spray
4 tsp. rice vinegar
4 tsp. soy sauce
1 1/2 tsp. sesame oil
1 tbsp. grated fresh ginger
2 cloves garlic, minced
1/2 tsp. sugar
1 tbsp. olive oil
8 oz. mushrooms, sliced
4 c. thinly sliced red cabbage
4 oz. snow peas, cut in half
2 c. hot cooked rice

Rinse chicken, pat dry & brush with sesame oil. Place on broiler rack which has been sprayed with Pam. Broil chicken about 3" down from heat, turning once, and brushing with sesame oil again. Meanwhile, stir together vinegar, soy sauce, sesame oil, ginger, garlic & sugar. Set aside. Heat oil in large skillet, saute mushrooms about 3 min. Add cabbage & cook, stirring often, til begins to soften. Add snow peas & cook, stirring til bright green. Add vinegar mixture and stir for 1 min. more. Divide vegetables among 4 plates. Cut chicken pieces diagonally across grain, into 1/2" strips. Arrange chicken over vegetables; serve with rice. Prep time 20 min. Cook time 12 to 15 min. Delicious, easy and quick!
