Scottish Shortbread

Pat Hefel

1 lb butter
1 cup sugar
4 cups flour

Cream butter until light and fluffy. Add sugar and beat until fluffy. Add flour one cup at a time, beat until fluffy. Pat into pie tins and bake 1 hour at 350 degrees until golden brown. Can also be baked in a 9 x 13 pan. Slice while still warm.
