Peanut Brittle

1/2 cup water
1/2 cup white karo syrup
1 cup sugar.

Combine in heavy 4 qt. pan and cook on high heat til boiling. add 2 cups shelled and husked virginia peanuts. i cook my peanuts in a microwave for 3 min and the remove the husks. add a pinch of salt after the peanuts. stir continuously and the mixture boils down and turns a golden color and the syrup "strings" when you hold up the spoon. turn off the heat, add 1/2 teaspoon baking soda, stir quickly and pour onto a greased pizza or cookie pan. let cool and the crack into pieces.
