Mocha Truffles

l bag chocolate chips (12 oz)
4 oz. cream cheese softened
l tbl. instant coffee granules
l tsp. vanilla extract chocolate or whie coating bar

Melt chocolate chips in microwave. Start with 1 min. keep checking so they don't burn. The chips don't loose their shape when they melt. Add the cream cheese and the coffee granules that have been dissolved in the vanilla. Mix well. Chill until just firm enough to shape. about 2 hrs. Mold into small balls. Place on waxed paper and chill till firm. Melt chocolate coating in microwave, dip chocolate balls in coating and place on waxed paper until hardened.
