Italian Sausage Roll-ups

1 1/2 lbs Ground, Sweet Italian Sausage
1 can Hunt's Spaghetti Sauce with Italian Sausage, 26.5oz.
1 pkg 8" flour tortillas, any brand you like
1 cup of Ricotta Cheese or Cottage Cheese
1 pkg. of shredded Mozzarella Cheese
Preheat oven to 425 degrees. In frying pan, break up Italian Sausage & cook until no longer pink in color. Drain off fat. Add 1 1/2 to 2 cups of Spaghetti Sauce & cup of Ricotta or Cottage Cheese. Cook on medium heat until cheese starts melting. Spray baking dish with non-stick cooking spray. Pour enough spaghetti sauce to cover bottom of baking dish. Spoon Italian Sausage mixture into tortilla shells & roll up jelly style & place in baking dish. Pour remaining spaghetti sauce on top of rolled tortillas. Cover with foil & bake for 30 minutes. Remove from oven & cover with Mozzarella cheese & return to oven for 5 minutes, uncovered or until cheese is melted.
