Hominy and Beef

1 lb hamburger (or ground turkey)
1 tsp salt 1 onion sliced or chopped
1 #3 can hominy (drained)
1/2 c tomato juice (or ketchup)
1 c shredded cheese
1 Tbsp Chili Powder (or 2T depending)
3-4 dashes paprika
1/2 cup sliced stuffed olives or green pepper

Brown meat, add onion, cook until onions are soft, add tomato juice, salt, chili powder, hominy & olives. Cover; simmer 20 minutes; spread on cheese & paprika; cover, cook 5 more minutes. This is a very good recipe to make a day or so ahead and reheat. Much better the second day!
