Good & Easy Vegetable Soup

Makes up "quick" when you've been quilting all day.
1 48oz can V-8 juice
1 # ground beef or turkey
1 10oz box frozen mixed vegetables
Any extra frozen vegetables, we like corn so I had more of that. Brown the meat, drain. Add V-8 and heat to a boil. Add frozen vegetables, bring to a boil then simmer for 10-15 min. Season to your taste. Delicious and easy to keep on hand. Sometimes I even cook a bunch of ground turkey and freeze it in packages made for the soup. Or add some pasta too.
