Easy Tangy Pork Loin Chops

1/2 C Orange Marmalade or Apricot Jam
1/2 C White Rice Vinegar
4- 1 to 1/2 inch thick lean Pork Loin Chops (boneless)

Spray baking dish with Cooking Spray. Arrange chops in the baking dish. Mix together the Rice Vinegar and marmalade or jam. Pour over chops. Cover with foil. Bake at 350 degrees for 30 minutes, turning once and spooning sauce over chops. Serve with the sauce dribbled over the chops. (Sometimes I add some cinnamon to the sauce to get that "Holiday" aroma). Adding fresh ground black pepper spices the dish up.
