Crockpot Chicken and Veggies

1 small fryer chicken or chicken pieces
2 cups mini carrots
1/2 med. onion, sliced
3-4 white potatoes (peeled or unpeeled) cleaned and chopped in bite-sized pieces
1 can chicken broth

Place veggies in crockpot, season with salt and pepper as you like. Place chicken on top; add chicken broth. Cook on low for 6-8 hours. Delicious with Italian bread.
