1 Box Jiffy Cornbread Mix:
Bake according to package directions, let Cool, crumble and layer in bottom of bowl. You may use your own cornbread recipe, I usually do.
1 Cup Chopped Green Onion
1 Cup Chopped Green Pepper
1 Can Red Kidney Beans, drained, washed off
1 Cup Chopped Tomatoes
Crumble the cooled cornbread in the bottom of a bowl. Lay the vegetables on top of the crumbled cornbread in layers. Mix 1 1/2 cup of mayo with 1/2 cup sweet pickle juice. Pour this over the top of vegetables. Let set overnight or at least until it is really had time to set and cool. Sprinkle grated cheese and bacon bits ( You may use chopped ham, turkey or what ever you prefer) just before serving.
