Corn & Beans "dip"
1 jar of your favorite salsa
1 can black beans, rinsed and drained
1 can whole kernel corn
1 T. lemon or lime juice
Mexican seasoning to taste(it's fine without any at all!)
splash of olive oil
Combine all ingredients and let sit in the fridge for a couple of hours. Serve with tortilla chips - we like "scoops" so we can get more in each bite! This goes over big at retreats and family get-togethers.
