Coconut Cake in a Bowl

1 White Cake Mix
2 Fresh Coconuts
2 Cups Sugar
6 Cups Milk

Bake a white cake mix per directions on box in two round cake pans. Using two FRESH coconuts, crack the hard outer shell into several pieces and then remove the coconut. Peel the brown layer off the coconut and rinse. Step 1: Put half the chunks of coconut in a blender with 1 cup of sugar and 3 cups of milk. PULSE (on/off) until coconut is finely grated. Step 2: Put a layer of cake in large bowl. Pour coconut, milk and sugar mixture over cake. Repeat Step 1 and Step 2. This is more like a pudding than a cake -- served in bowls and eaten with a spoon. Absolutely delicious!
