Chicken Provencal

Easy Slow Cooker recipe--serves 3 or 4
4 large chicken breast halves
2 tsp. dried basil
1 large red sweet bell pepper, cut in large chunks about 1 in. square or larger
1 can (15 oz.) cannellini beans (or great northern beans) drained and rinsed
1 can (15 oz.)Italian seasoned diced tomatoes with juice
Layer all ingredients in slow crock-type cooker in order given. Cook on low all day, at least 8 hrs. Resist the urge to add water! It is high protein, low fat, high fiber, and about 260 calories per serving. Serve with brown rice or cooked pasta.
Optional changes: you can add chopped onion, carrots, or any favorite vegetable. You can add an extra can of beans and tomatoes if your slow cooker is large; you will have a sort of thick soup/stew when it is done. Even my picky children eat this recipe.
