(prep night before for brunch OR prep morning for evening meal)
YOU WILL NEED:
10 to 12 slices of bread, torn into small pieces or cut into cubes
1 to 2 lbs. shredded cheddar cheese (or favortie combo)
8 to 9 eggs
3-1/2 cups milk
2 teaspoons dry mustard
2 teaspoons salt
Dash of pepper
Garlic powder to taste
1 small can diced jalapenos
1 teaspoon cayenne pepper
Chopped broccoli, grated carrots
Your choice cooked bacon or sausage patties, crumbled
1)Grease 9x13 dish
2)Grate and chop ingredients, cut bread, measure liquid and dry seasonings, set all aside
3)Spread half of the bread on bottom of dish
4)Cover with cheese
5)Spread other half of bread over cheese
6)Cover with more cheese, reserving some cheese for mixture and top
7)Beat 8 eggs with milk
8)Add mustard, salt, vegetables, jalapeos, cayenne, crumbled bacon and/or sausage OR shredded chicken and mix well.
9)Add about 1 pound of cheese and blend together.
10)Pour mixture over pan, making sure all is covered.
11)Top with remaining cheese.
12)Cover with foil and refrigerate overnight or all day.
13)When ready to cook, place foil under pan, place in cold oven and turn oven on at 350 degrees and cook for 1 hour - cheese should be melted throughout and will be brown. SERVE with fruit and hot beverage.
