This is a really fast recipe to make, which is made best with overripe bananas. It came from a lady my mother worked for in high school. We've always called it Rotten Banana Bread!
½ c. butter or margarine
1 c. sugar
1 c. bananas
2 c. flour
1 t. soda
Optional: ¼ to 1 cup of raisins and/or ¼ c. chopped nuts.
Mix butter and sugar; beat in eggs. Add mashed bananas. Add 2 c. flour mixed with the soda and salt. Grease and flour two loaf pans. Bake at 350º for 40-45 minutes, or until toothpick comes out clean. If you don't have a full cup of bananas, add baby food carrots or squash, or just make it with one of those and no bananas. Add 1/4 t. of cinnamon and/or nutmeg, or allspice to the dry ingredients before mixing. (Note: Make two loaves - one loaf takes too long and crust begins to burn.)
