Baked Oatmeal

Kind of an odd dish, but make it once and you will be hooked. I make enough for 4 breakfasts at a time.
Use a 2 qt covered baking dish Mix together:
4 C milk
2 C old fashioned oatmeal
1/2 C dried Cherries ( I used cherry flavored Craisins)
1 diced apple
1/2 C Chopped nuts....walnuts, pecans etc
1 tsp almond extract (important ingredient)
1/4 C Brown sugar

Pour into the casserole dish and bake covered at 350 for 45-55 is done when the apples are baked and if you shake it, it is pretty firm. Serve with some cold milk, can be reheated in the micro.

I make this weekly for my husband and myself. It's the best quick breakfast. Great recipe.
