Apple Pudding Cake

This is so easy and very good. It smells divine baking. You prepare it in the cake pan that you bake it in. Serve with Cool Whip while warm.


3/4 cup of firmly packed brown sugar
1 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon of cinnamon
1/2 cup of milk
2 tablespoons of vegetable oil
1 teaspoon of vanilla extract
1 large apple peeled and diced
3/4 cup of brown sugar
1 cup hot apple juice or cider

Combine brown sugar, flour, baking powder, and cinnamon and put in lightly greased pan. Add milk, oil, vanilla, and brown sugar. Stir til well blended. Stir apple into mixture. Sprinkle top with brown sugar and pour apple juice or cider on top. Bake for 350°F or until a cake layer forms on the top. Cool slightly and serve.

Apple Pudding Cake
I am going to try this recipe for my Thanksgiving menu this year. I love to bake while I'm quilting - it makes the house smell so welcoming and it completes me!!
