Almost Guilt-Free Brownies

3/4 c. olive oil (do not use extra virgin)
4 eggs
2 c. sugar
1 tsp. vanilla
1 2/3 c. whole wheat flour
1/3 c. cocoa powder
1/2 tsp. baking powder
1/2 tsp. salt

Place all ingredients in a large bowl and beat until well mixed. Pour into a 9x12 baking pan (no need to grease or flour), and bake at 350° F 25-30 minutes or until toothpick inserted in the middle comes out clean. You can substitute canola oil, but I find it can leave a slight "turpentine" taste whereas regular (light) olive oil gives no added taste of its own. I bake these at high altitude, but they should work at sea level.
