2 1/2- 3 lbs whole chicken (Sometimes, I pit a couple of carrots, a stalk of celery, and one small onion into the cavity.)

Season chicken, then wrap twice in aluminum foil. Prepare a tin coffee can by using a churchkey around the bottom of the can. Place 15 charcoal briskets into the can. Light the coals and when they become grey, insert your chicken bottom side down, and forget about it for 2 hours. It will be done and almost all of the coals will be gone. Unwrap the chicken and cut. You will find this chicken to be very moist, and your guests will love it! You can also do a pork or beef roast the same way.
